To report all daily restaurant issues to General Manager. To plan, organize, direct and manage all activities within the oversee the entire food production according to standards. To manage and grow the Delivery departmental sales while maintaining service, food and delivery standards. To ensure that the Outlet’s Operational budget is in line and costs are strictly controlled maximizing profitability. To maximize profitability of the outlet .To report all financial data to the Chief Accountant/Cost Controller. To check and taste food before service. To ensure guest needs and guest expectations are met and exceeded. To ensure a consistently high standard of cleanliness, repair and maintenance. To ensure a consistently good standard of food quality, efficient profitability and creative presentation. To liaise with accounts manager and storekeeper to ensure prompt and efficient purchasing, issuing of supplies, stock control and inventory control. To liaise with the accounts department to ensure the efficient control of the outlet account receivables, monthly inventory, spoilage, wages. To instruct and manage stewards to ensure a high standard of cleanliness, maintenance and adequate provisions of operating equipment. To conduct regular meetings and briefings for employees. To that all safety ensure rules, emergency procedures and fire prevention regulations are strictly enforced by employees. To organize and set up the kitchen as efficiently as possible to increase speed, maximize productivity and consistency. To ensure that all dishes are prepared consistently and according to standard recipes. To drive food, payroll and operating costs and control these by all necessary action needed as reducing waste and utilizing all resources available. To supervise and prepare daily mise en place and ensure that all sections are ready on time. To observe closely during the daily operation assigned staff and assure that given guidelines are followed. In case of deviations, he will take corrective measures immediately. To check daily all storage areas and keep the orders to par or according to the volume of business. To maximize employee moral and productivity. To work in any sections of the kitchen when necessary or as strives to develop and increase Sales in order to increase ensure the correct scheduling of employees to maintain standards of service. Ensures that both he and his employees report for duty punctually, maintaining a high standard of Personal grooming, wearing the correct uniform at all times. To ensure that all employees have a complete understanding of and adhere to the company’s policy and procedures. To conduct training courses for new employees and regular "Refresher" courses for newly hired and existing employees. To conduct Employee Performance Appraisals for all Outlet employees to review their general performance, discuss existing performance and areas for improvement. To supervise orientation program for new employees to make sure that they understand the policy and procedure of the that both he and his employees participate in any scheduled training or development program that may improve personal or departmental standards. To ensure that employees provide a friendly, courteous, and professional service to guests at all times. Reports all staff issues to the HR Manager. To ensure that all departmental reports, Sales and plans, schedules, menus, logbook, inventories, guest comments reports, guest history records and correspondence are completed. To ensure proper requisitioning and controlling of food and beverage, operation and guest supplier. To ensure that all requisitions, transfers and receiving are correctly recorded on respective forms. To respond to any changes in the Food and Beverage function as dictated by the General Manager
