Food and Beverage manager - لوذان للتجارة المحدودة

SCOPE OF POSITION:

A food and beverage manager conducts many major tasks in a hotel, The F & B manager's duties encompass office obligations, including checking budgets, payroll and food order invoices from suppliers. He also hires and schedules servers, and other food service employees, assigns kitchen staff to cooking and preparation tasks, and determines service standards for personnel. A food Manager needs a thorough knowledge of International and ethnic cuisine, food preparation and the costs of purchasing items for particular dishes. They plan menus for restaurants and special events like banquets.



TASKS, DUTIES AND RESPONSIBILITIES



• To ensure outlets and event areas are appropriately staffed at all times

• To recruit staff, in association with the General Manager and ensure they are properly supervised, trained and aware of the Hotel policies.

• To take charge of the control of the food and beverage cost by looking at purchasing, receiving and issuing policies

• To be the licensee for all food and beverage outlets.

• To ensure that monthly stock checks are performed and identify any irregularities.

• To ensure the correct cash coupons and invoices to outside clients handling procedures are observed before reporting to the accounting department.

• To be fully aware of the POS system and reprogramming operation.

• To deal with associated administration, invoices, rosters, time sheets and email.

• To ensure that the areas under your control are well presented.

• To be aware of the overall the Hotel mission and vision, deal with any complaints

• To assist in developing operations as the business moves on.

• To compile and cost menus in conjunction with the General Manager, the accountant and the Chef

• To ensure that Event & Banquet operation maintains a competitive edge through high standards of cleanliness, service and menu offerings.

• To put in place an effective stock control measures in relation with the General Manager.

• To maintain an equitable and effective staffing structure in Event operations, which will include providing cover for the Chefs as required

• To ensure that the catering operation optimizes on average spends

• To work closely with all food and beverage suppliers ensuring the business receives competitive terms

• To ensure the catering operation complies with all statutory requirements, including food hygiene and health & safety duties. This will require that regular training/briefing of staff is undertaken.

• To assist the General Manager in overall budget compilation

• To continuously improve guest satisfaction and loyalty by ensuring that all situations are dealt politely and calmly as well as running satisfaction surveys

• To assisting the General Manager with the recruitment, training and development of front line staff, including yield management practices.

• To control all major event bookings

• To maintain a high standard of personal hygiene and appearance.

• To observe and implement procedures of fire prevention and evaluation with the Operation manager.

• To report to the General Manager any accident(s) or dangerous occurrence whether anyone is injured or not, or any practice, system of work or condition which you may consider may create a risk to health and safety of a person or damage premises.

• To carry out any reasonable request by Management.

• Plan, coordinate and implement special events and holiday functions.

• Participate in property meetings and employee functions as required.

• Approve all weekly time sheets /payroll, purchase orders, and invoices. Update time & attendance point sheets as needed.

• Assist with monthly food and supply inventories as directed.

• Work with Executive Chef on creating menus, pricing, specials, shared budgets for china, glass, silverware and equipment, food costs, monthly expenses.

• Responsible for the creation and communication of all restaurant operating hours and schedules.
