Director of Procurement [ANJUM Hotel - Mecca] - Anjum Hotels

Job Purpose



Reporting to and working closely with the CEO, this role is to lead and develop the Company’s Procurement and Catering Division.

The company will aim to provide our hotels, and other hotels, with semi prepared food ready to be treaded in a “finishing kitchen”.

Our own hotels will eventually reach a capacity of 30 000 rooms.

We will also sell to other hotels and should plan for very large volumes of food procurement and preparation by our off site central kitchen.

The company must be profitable and also contribute to the quality and profitability objectives of the hotel division.



PRIMARY RESPONSIBILITIES

• Organize and develop the new the company from an administrative and legal aspect.

• To be instrumental in the delivery of budgeted profits at the procurement and catering company level through contract negotiations and efficient management.

• To maintain close working relationships with all managers and chefs to ensure that purchasing and cooking continually reflects the needs of the business and its customers

• To be constantly aware of the market trends.

• To constantly keep a worldwide list of reliable suppliers.

• To be responsible for compliance with all supplier related food Health and Safety regulations

• To uphold environmental standards and policies throughout the buying process

• Support the delivery of hotel budgets at operation level via process enhancement and proper internal controls

• Adopt best practices to reduce overheads and attain improved efficiencies

• To implement and maintain best practice buying and stock management disciplines Working closely with the finance team to ensure that purchasing and stock management IT systems and operator skills are managed and used effectively

• Anticipate and take responsibility for driving through business change

• Take responsibility for the future of the department by challenging assumptions, developing contingency plans, and generating imaginative, novel or adaptive ideas
