Operational
1. Provides functional assistance and direction to the kitchen operation as assigned.
2. Co-ordinates functions and activities with other Food and Beverage Department Heads.
3. Assists the Executive Chef in supervising the functioning of all kitchen employees, facilities and costs to ensure maximum Food and Beverage department profit is achieved.
4. Assists the Executive Chef in controlling and analyzing, on an on-going basis, the following:
5. Quality levels of production and presentation in their respective areas.
6. Guest satisfaction
7. Cleanliness, sanitation, and hygiene.
8. Ensures optimum performance in all of the above areas as assigned.
9. Assists the Executive Chef in the production, preparation and presentation of all food items to ensure highest quality at all times.
10. Assists in maintaining effective employee relations.
11. Assists with Banqueting/functions and take away when required.
12. Assists the Executive Chef in conducting formal and on-the- job training sessions for kitchen employees.
13. Assists the Executive Chef in the completion of market lists in accordance with Company’s quality and quantity standards. Checks perishable food items received for quantity and quality standards.
14. Informs on a daily basis the Executive Chef of all relevant information in operational and personal matters.
15. Assists the Executive Chef with inspections of physical aspects of all kitchen areas, cold rooms and equipment.
16. Provides hands on supervision and assistance in all Kitchen areas assigned by executive Chef.
17. Performs related duties and special projects as assigned.
18. Supervises the delivery of fruits and vegetables, optimize their use and supervises staff and duties in vegetable preparation room;
19. Is in charge of the set up and replenishment on Deli Section as well as on the international salad section;
Marketing & Development
1. Be continually aware of all business unit services and activities to be able to promote the various offerings.
2. Constantly strives to develop and increase sales in order to increase profitability.
3. Provide Management with creative ideas to project and enhance the business units image, increase level of service, guest convenience, or methods to increase revenue.
4. Help to develop and nurture relationships with press contacts, clients and management.
5. Participate in the development of annual promotional activities based on guest feedback and market potential.
6. Play a key role to increase the relevance of our product offering.
Financial & Legal
1. Ensure all transactions are according to company's financial and legal policies and code of ethics.
2. Assist in ensuring that business unit costs are strictly controlled.
3. Ensure that adequate records are kept in order to offer statistical analysis.
4. Contribute to profitability of the business unit by controlling costs in own area of responsibility.
Human Resources
1. Assist in conduct training courses for new employees, and regular "Refresher" courses for newly hired and existing employees.
2. Assist in the building of an efficient team of employees by taking an active interest in their welfare, safety, training and development.
3. Ensure that all employees report for duty punctually, maintaining a high standard of personal grooming, wearing the correct uniform and nametag at all times.
4. Schedule employees appropriately to maintain standards of service.
5. Ensure that all employees have a complete understanding of and adhere to the business unit’s policy and procedures.
6. Participate in conducting Performance Appraisals for reporting employees to review their general performance, and to discuss existing performance and areas for improvement.
7. Assist in sourcing and monitoring new talents to ensure a thorough development and succession planning.
