Restaurant Manager - Bay Lodge

Main duties:

Prepare and administer timely Performance Evaluations according to hotel standards.

Prepare restaurant P & L, budget reports, and write commentary

Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended

Anticipate guests’ needs and respond promptly to guests’ requests

Maintain positive guest relations at all times

Resolve guest complaints ensuring guest satisfaction

Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately.

Monitor and maintain cleanliness, sanitation, and organization of assigned work areas

Ensure that staff reports to work as scheduled. Document any late or absent associates.

Inspect grooming and attire of staff; rectify any deficiencies.

Monitor performance of staff and ensure all procedures are completed to the department standards; rectify deficiencies with respective personnel

Foster and promote a cooperative working climate, maximizing productivity and associate morale.

Provide feedback to staff on their performance; handle disciplinary problems and counsel associate according to Hotel standards

Interview and hire new personnel according to Hotel policies and standards

Document pertinent information in the logbook and follow up on items notated during other shifts

Make frequent inspections in the restaurant and room service area, as well as the elevator used by Room Service to ensure that cleanliness and standards are maintained at all times.

In cooperation with Chef, he will make sure that portions are adequate, presentation and quality are according to standard.

Arrange with the Chef for food tasting of all new menu items.

Arrange with the Chef menu Planning

Submit the time sheet showing the number of hours worked each day for each employee.

Inspect the physical condition of the Restaurants / Mini Bar/ Room Service trolleys decoration and equipment to ensure repair and consistent maintenance

Keep a guest history in order to have all necessary information available.



Sales Duties:

Responsible for the business performance of the restaurant.

Analyze and plan restaurant sales levels and profitability. Organize marketing activities, such as promotional events and discount schemes.

Assist in achieving or exceeding budgeted goals in sales, profit and occupancy for the total hotel operation

Report on trends in the industry and local markets

Creating and executing plans for department sales, profit and staff development.

Setting budgets and/or agreeing them with senior management.
